Okay, so the Chiltern Firehouse is the chosen hangout for top drawer celebrities. Even the prime minister of the United Kingdom has dropped by with his wife. It’s also one of London’s first purpose built fire stations (the clue is in the name), and now this Victorian building has also been given Grade II listed status. Throw in the fact it’s been transformed with a New York vibe and things are looking particularly hot at this former home of the firefighters.
And when it’s hot we think of Daiquiris, so it’s more than a little apt it’s getting behind National Daiquiri Day. Bars Manager, Francisco Santos tells us more.
So, Francisco, what’s your definition of the Daiquiri?
The best of three worlds blended in a craftsmanship that only a few can master and everyone loves.
What does the taste conjure up to you?
It is the perfect balance of sweet, sour and Bacardí Superior – fresh and easily enjoyable.
Do you remember the first time you tasted one? If so, what was it like?

How do you like yours?
I prefer mine with fresh lime, caster sugar and Bacardí Superior.
Why do you think it’s such a classic drink?
In my opinion what makes a classic cocktail is for it to be simple, with all the ingredients in harmony. It also needs to be easy to reproduce even in the most remote corner of the world. This is the only way to live through the times.
Where would you most like to enjoy one?
The ideal place to enjoy a Daiquiri would be anywhere, in the right moment with the right people, although an island with a beautiful sunset would do just as fine!
Tell us about the Daiquiri you’ll be serving for National Daiquiri Day?
All my Daiquiris will be made with passion, love, fun and served with a a smile and pride.

I believe that Daiquiris should have a sharpness that only white rum can deliver. Bacardi 44.5% Heritage takes it to a different level by raising the abv.
