Cordials, syrups, sherbets, shrubs and superb Chivas serves to see you through the whole year.
This month’s Chivas Seasonal Serve from Josh Reynolds, Global Winner of the Chivas Masters Cocktail Competition 2015, is an elegant rocks drink best enjoyed slowly during the winter months.
Bergamot and chamomile cordial
“Bergamot is a flavour sensation,” says Josh. “It’s super sour but with a wicked kick to it. And the chamomile gives the cordial a honey vibe. The drink I’ve made with it is a nice slow sipper that has really fragrant tones running though it all the way to the garnish. The white cacao and agave sweeten up the tartness of the cordial while the Chivas gives the drink its the back bone. As you drink it the different ingredients really draw you in.”
Ingredients:
325ml bergamot juice
280g caster sugar
2g citric acid
10g chamomile flowers
Method:
Juice the fresh bergamot, add the caster sugar and citric acid, then stir to dissolve. Heat it to 80 degrees and infuse the chamomile flowers for 10 minutes. Strain and bottle.
Use it in the following:
35ml Chivas Regal 12 yo
15ml bergamot and chamomile cordial
10ml white cacao
2.5ml agave syrup
Stir all ingredients over ice and strain into an ice-filled rocks glass. Zest with a large pink grapefruit peel and garnish with the twist.
