Cordials, syrups, sherbets, shrubs and superb Chivas serves to see you through the whole year.
There’s a definite chill in the air and autumn is well and truly here. Time for another Chivas Seasonal Serve as Josh Reynolds, Global Winner of the Chivas Masters Cocktail Competition 2015, gets inspired by fresh blackberries and maple syrup.
Blackberry and maple shrub
“This is one of the few drinks I’ve created for this series that is stirred down and it’s an idea I’m really proud of. It’s a lovely use of the classic garden favourite, the blackberry and together with the maple syrup I’ve made a shrub which is a really intricate balance of fruity, rich and tart flavours which really link the Fernet Branca, Pedro Ximenez and Chivas together beautifully. Think of it as a riff on a Manhattan but an addictive one. An elegant autumn tipple.”
Ingredients:
600g blackberries
200ml maple syrup
50ml Cabernet Sauvignon bitter sweet vinegar
Method:
Muddle the blackberries into the maple syrup and add the Cabernet Sauvignon vinegar. Stir, strain and bottle.
Use it in the following:
40ml Chivas Regal 12 yo
20ml blackberry and maple shrub
10ml Pedro Ximenez
5ml Fernet Branca
Stir over ice and strain into a chilled coupette glass. Garnish with a cherry
