The latest Chivas Seasonal Serve from Josh Reynolds, Global Winner of the Chivas Masters Cocktail Competition 2015, is a surprising, summer serve.
Passionfruit and chai tea syrup
“Passion fruit and chai tea syrup are two flavours that deserve a touch more credit,” says Josh. “Passion fruit is wonderfully tart and I love the soft aromatic flavours of the chai tea. Both work really well with the Chivas and the passion fruit especially led me to create a tiki sort of drink, with some coconut water for a slight salinity and banana to back it up. Fun and tropics in a glass.”
Ingredients:
355g passionfruit pulp
355g caster sugar
70ml water
20g chai tea
Method:
Extract the passionfruit pulp, add the caster sugar and water, stir until dissolved. Strain off the passionfruit pips, then heat the syrup to 90 degrees, add in the chai tea and leave to infuse for 20 minutes. Strain and bottle.
Use it in the following:
50ml Chivas Regal 12 yo
20ml passionfruit and chai tea syrup
20ml lemon juice
20ml coconut water
10ml orange juice
10ml Giffard Banane du Bresil liqueur
Shake and strain into an ice filled hurricane glass, garnish with pineapple leaf, banana slice, orange slice and mint sprig.
