Short and sharp, the latest Chivas Seasonal Serve from Josh Reynolds, Global Winner of the Chivas Masters Cocktail Competition 2015.
Rhubarb and cardamon syrup
“This is a really beautiful combo, “says Josh. “The tartness of the rhubarb and the warming spice of the cardamom really enhance the Chivas, while the sherry adds a dryness and the lime gives it a sour edge. It’s a very light, citrusy drink.”
Ingredients:
700g rhubarb
415g caster sugar
25ml water
2 cardamom pods
Method:
Chop the rhubarb into small pieces, add to a pan and coat with the caster sugar. Add the water and poach over a low heat for 40 minutes. Strain and blend the syrup with the cardamom pods. Strain again and bottle.
Use it in the following:
35ml Chivas Regal 12 yo
20ml rhubarb and cardamom syrup
15ml manzanilla sherry
15ml lime juice
2 dashes orange bitters
Shake and double strain into a nick and nora glass, zest orange peel and discard.
