Jiro Shirasu
“Jiro Shirasu was a Japanese economist who studied in the UK when he was a young man. After the Second World War he knew his country needed to build a new relationship with the USA. He spoke English which was very unusual back then and his was a country where tradition was extremely important. He was very unconventional in that he went against tradition to forge a new relationship with the USA which went on to become vital in his country’s recovery.
Not many people really know about him today so I wanted to represent his achievements. My drink is a twist on the Last Word and I call it Sage The World. It’s a word play on Save The World, in a way that’s what I believe he did.”
Sage the World
Ingredients
30ml G’Vine Nouaison
2 sage leaves
25ml Manzanilla sherry
20ml lemon juice
15 ml homemade sage and green tea syrup
Method
Muddle the sage leaves, add the other ingredients and shake over ice. Double strain into glass rinsed with absinthe and garnish with a sage leaf.
