
A particular favourite of ours for lazy (and hazy) summer chillin’. There are a number of fruity variations of the Mojito and a particularly interesting one with Budvar, but the classic still sits at the top of our tree.
Our tips:
Most recipes call for sugar but sugar syrup blends more easily and lends the drink a little more body. Roll the lime vigorously along your work surface before squeezing to extract more juice.
Ingredients:
2 ounces light rum
¾ ounce simple syrup
1 ounce fresh lime juice
Chilled soda water
Handful of fresh mint
Method:
In a highball glass muddle most of the mint leaves with the syrup until the leaves are pretty much crushed. (If you don’t have a muddler or the glass is too deep to use one then you can use a pestle and mortar before transferring over to your glass.) Add the lime juice, rum and ice and give the mixture a good stir. Top up with the soda and add a little sprig from the remaining mint on top to garnish.
