So Dean, what is it about the Daiquiri that has made it a constant throughout drinking history?
It’s simplicity. With only three ingredients it’s easy to make but very difficult to master.
What external influences have inspired you from the era you have chosen?
We decided to keep the drink as simple as possible and use tropical flavours. So I guess we have a tiki take on the classic, ours is minimalist and stylish, but with a tropical twist. We were inspired by the ladder shed and the courtyard at Chiltern which feels elegant, glamorous and exotic.
What cues from the era have you included in your drink?
The beautiful and vibrant flavours one associates with tiki styled cocktails.

Our Daiquiri is refreshing, elegant and packed full of Caribbean flavours, it will immediately transport your taste buds to Cuba.

It’s all about the balance! Not too sweet, not too tart and with the full flavours of the rum on show. Just play around with the balance until you have your favourite blend!
