His liquid menu takes in an appetising ‘Three Citrus Ricky’ hors d’œuvre (Ketel One Citron, Fino sherry, pineapple juice, lemon juice, Dalhwinnie Scotch, yuzu and soda), moving on to a more sunstantial Plats principaux course of the signature ‘Pembury Cup’ (Pimm’s No.1, Tanqueray Gin, watermelon, coriander and Champagne).
